Here at Coco & Wolf we believe breakfast is underrated and breakfast in bed even more so! The fact it is so seldom enjoyed adds to its charming appeal. What could be better than being snuggled up under sumptuous, luxuriously soft to touch bedding, morning sunshine pouring through the curtains and enjoying a leisurely and delicious breakfast. Heavenly! Whether it is indulged in as part of a special occasion or just a weekend treat we ae encouraging you to revel in breakfast in bed as soon as possible.

 

Certainly in our house, breakfast day to day is usually quite rushed, so to afford the most important meal of the day a little more time and relaxation instantly feels luxurious. It’s a lovely time to relax, ease into the day, take time to eat well and enjoy your favourite magazine or newspaper. And you don’t have to fall into the trap of feeling breakfast in bed has to involve decadent fare - whatever you enjoy goes. We love homemade granola and natural yoghurt topped with seasonal fruits; it might not be indulgent or take lots of effort to prepare but the very act of eating it in bed with the beautiful surroundings of Liberty fabric bedding and propped up on a cloud of cushions feels lavish. We’ve shared our favourite homemade granola recipe below which you can make ahead and keep it in an airtight jar ready for your future breakfasts in bed!

Your Breakfast in Bed Essentials

Breakfast in Bed Granola

Breakfast in bed granola recipe by Coco & Wolf

 

Recipe

Step 1
Preheat the oven to 140c, fan setting.

Step 2
Line a large baking tray with baking paper.

Step 3
Heat the coconut oil, maple syrup and cinnamon in a saucepan over a low heat until melted and well combined.

Step 4
Remove the pan from the heat and add in the orange juice.

Step 5
Mix the rest of the ingredients except the raisins and coconut in a big bowl and pour over the oil and syrup mixture and mix well.

Step 6
Spread the mixture evenly over the lined tray and bake for about 45 minutes, turning over every 5 minutes, until golden brown.

Step 7
Allow to cool and mix through the raisins and coconut flakes. Store in an air tight jar.

Ingredients

400g jumbo oats
6 tablespoons coconut oil
180ml maple syrup
4 teaspoons Ground cinnamon
Grated zest of 1 orange
Juice of 1 orange
70g sunflower seeds
50g pumpkin seeds
40g almonds, roughly chopped
40g hazelnuts, roughly chopped
100g Coconut flakes
200g Raisins
